This is a hands-on programme, designed for the home-smoker who would like to know more about this technique for preserving foods. Participants fillet their own fish, learn the salting process, and either hot- smoke (cooking), or cold-smoke their fillets. If cold-smoking is demonstrated, when their own fillets are smoked, the finished products are vacuum-packed and sent on to the participants when ready next day. Hot-smoked products are ready for packing and carrying home after the class. Light lunch/refreshments will be provided (smoked fish platter/home-made soup).
